UNTERSUCHUNG DER ERNÄHRUNGSBIOLOGISCHEN QUALITÄT DER PROTEINE VON VIETNAMESISCHEN MAISSORTEN
Abstract
Protein content and amino acid composition of 16 maize cultivars grown in Vietnam were studied. The varieties used for human nutrition (sweet maize) had a much higher protein content than hybrids grown for feeding. The in vitro biological value data calculated on the basis of amino acid composition were also higher by sweet maize varieties than those of other hybrids.
